easy air fryer “fried” pickles (gluten free & keto)

When eating on the keto diet it’s easy to get into a snack rut. With just 5 ingredients these pickles sure do hit the spot! They are perfect for game day, entertaining or just because! Our family loves all things pickles so when the craving or occasion hits, I am able to pop in the kitchen and have a fresh, tasty, homemade snack in less than 15 minutes.

The kids got me and air fryer for Mother’s day 2020 and I LOVE IT!!!! Anything I can cook in it and save time is huge, in my book! I’ve made everything from homemade mozzarella sticks to shrimp, and of course the precooked kid friendly items like chicken nuggets and fries.

I don’t know about you, but I am guilty of buying an air fryer or 2 this year….yes that’s right, I’m on my 3rd air fryer! I started with the instant pot vortex air fryer and loved it so much, I upgraded to the bigger vortex pro. Then I bought a second vortex for the basement for entertaining…hello chicken wings!

Now lets make some fried pickles! Let’s get the air fryer ready to do its magic. Preheat the air fryer to 400 degrees.

Now on to the fun stuff. Start by either draining the pickle juice from the jar or use a slotted spoon to retrieve the pickles you want to use for the recipe. Place the pickles on a paper towel in a single layer, pat the other side of the pickles with another paper towel to get them dry.

While they are drying crack your egg in a bowl and whisk the egg until smooth. In another bowl mix together the dry ingredients. Add the pickles to the egg and coat thoroughly then transfer to the dry ingredients until well covered on both sides. Add the pickles to the air fryer basket or tray, repeat until all of the pickles are breaded.

Air fry for 10 minutes, flipping the pickles at the 8 minute mark. Let cool and enjoy with your favorite dipping sauce.

  • Air Fryer

Ingredients

  • 1 jar Sliced Pickles
  • cup Crushed pork rinds
  • 1 cup Grated parmesean
  • 1 Tbsp Ranch seasoning
  • 1 large egg

Instructions

  • Set air fryer to 400 degrees & preheat.
  • Break the egg in a large bowl and whisk until smooth.
  • Mix together the dry ingredients in a separate shallow bowl.
  • Drain pickles, thoroughly dry pickles with paper towel.
  • Coat the pickle slices in the egg. It is best to do this in small batches.
  • In small batches throughly coat the pickles in the dry mixture.
  • Transfer the coated pickles to the air fryer basket or tray, in a single layer.
  • Cook for 10 minutes. Carefully flip the pickles at the 8 minute mark.
  • Let cool and enjoy with your favorite dipping sauce.
